QUICK GAZPACHO
Ingredients
- 1 cup water
- 500 g fresh tomatoes (peeled and diced)
- 1 cucumber (peeled and sliced)
- 1/4 cup mixed vegetable flakes
- 1 tbsp onion powder
- 1/4 tsp garlic powder
- 1/4 tsp Windsor® Half Salt™
- 1/8 tsp ground red pepper
- 1/4 cup olive oil (or vegetable oil)
- 2 tbsp wine vinegar
- croutons (optional)
- diced tomato (optional)
- cucumber (optional)
- 1 cup water

Recipe Preparation
For the Quick Gazpacho
- In an electric blender, combine all ingredients except oil and vinegar.
- Cover and blend until almost smooth.
- Stir in oil and vinegar. Chill well.
- Cover and refrigerate at least 2 hours or overnight.
- Serve in bowls and, if desired, garnish with croutons, diced tomato and cucumber.
