BRINED CORNISH GAME HENS WITH LIME GINGER GLAZE
Ingredients
Brined Cornish Game Hens
- 1/2 cup La Baleine Fine Sea Salt
 - 1/2 cup brown sugar (packed)
 - 4 cup water (cold)
 - 2 Rock Cornish game hens (about 1-1/2 lbs (750 g) each)
 - 1/3 cup hoisin sauce
 - 1 tbsp lime (chopped)
 - 1 tbsp ginger root (grated)
 - 1/2 tsp red pepper flakes (crushed)

Recipe Preparation
          Brined Cornish Game Hens
- Place game hens in plastic bag. Add mixture of salt, sugar and water. Seal bag and refrigerate about 1 hour.
 - Drain hens and rinse well with cold water. Pat dry and place on rack on baking sheet.
 - Combine remaining ingredients to make glaze, brush over hens.
 - Bake at 375F (190C) about 45 minutes, brushing with glaze every 15 minutes, until juices run clear.
 - NOTE: Brining ensures moist, succulent poultry.
