CRUSTY HERBED CROSTINI
Ingredients
Crostini
- 1/2 baguette
 - 2 tbsp olive oil
 - 1 cup soft goat cheese (log)
 - 1 tbsp fresh rosemary (minced)
 - 1 tbsp fresh thyme leaves (minced)
 - 1 tbsp italian parsley (minced)
 - 1/3 cup roasted red pepper (diced)
 - optional olive oil (for drizzling)
 - For garnish Windsor® Black Peppercorns (freshly ground)

- 1/2 baguette
 - 2 tbsp olive oil

Recipe Preparation
          Crostini
- Heat broiler in oven.
 - Cut baguette into 1/2-inch (2 cm) thick slices.
 - Brush both sides of each slice lightly with olive oil and place on baking sheet.
 - Place under broiler, about 1 minute on each side, or until lightly golden. Remove from oven; set aside.
 - Combine goat cheese with herbs in a medium bowl.
 - Spread 1 tbsp (15 mL) cheese mixture onto each baguette slice.
 - Top with 1 tsp (5 mL) roasted red pepper. If desired, drizzle with additional olive oil.
 - Finish with freshly ground Windsor® Black Peppercorns, to taste.
 
Tip: To make ahead, prepare baguette slices and store in air-tight container. Prepare goat cheese mixture and keep in refrigerator. Just before serving, assemble crostinis and arrange on a platter or tray.
