EXOTIC SPICE RUB
Elevate your appetizers with this fabulous faraway spice rub. Perfect for your favourite meat.
Ingredients
Spice Rub
- 1 tsp Windsor® Black Peppercorns (freshly ground)
 - 1 tsp ground coriander
 - 1 tsp ground cinnamon
 - 1/2 tsp ground cloves
 - 1/2 tsp ground allspice
 - 2 tsp ground cumin
 - 1 tsp ground cardamom
 - 1 tsp ground nutmeg
 - 1 tbsp Windsor® Kosher Salt
 
For beef and lamb
- 2 tbsp of olive oil
 
Spice Rub
- 1 tsp Windsor® Black Peppercorns (freshly ground)

For beef and lamb
- 2 tbsp of olive oil

Recipe Preparation
          For Spices
- Mix all spices in a bowl.
 
For Beef & Lamb:
- Brush meat with olive oil, then rub the spice mixture on the meat and let sit for 30 minutes.
 - Grill to desired doneness.
 
Chicken
- Toss chicken drumsticks in the spice mixture and refrigerate for 30 minutes to one hour before baking.
 - Place on a lined baking sheet and bake in oven at 400°F (200°C) for 40 to 45 minutes, turning after 20 minutes.
 - You can also grill on the barbecue, turning frequently until done.
